Delaware County restaurant inspections

Comments on food-safety inspection violations conducted last week by the Delaware County Health Department of establishments with liquor licenses that had violations, which this week was 12 of 13:

• Person in charge is not a Certified Food Protection Manager who has shown proficiency of required information through passing a test that is part of an accredited program.

• Disposable paper towels not provided at the hand washing sink in employee restroom.

• Raw burgers stored above waffles; raw shell eggs stored above lettuce.

• Date marking is not on food in refrigerator/freezer.

• Exterior side door by pool table allows access for pests at bottom.

• Cutting boards under microwave observed with deep gouges and staining.

• The women’s restroom lacks a covered receptacle for disposal of feminine hygiene products.

• Liquid hand soap not provided at the hand washing sink by beverage station.

• Working container of spray bottle with clear liquid not properly labeled.

• In-use wiping cloths are not stored properly.

• Equipment/Utensils are not properly Air-Dried after cleaning and sanitizing at dishwashing station. (Wet Nesting)

• Observed (one-use) gloves stored on prep tables.

• Test kits or other devices are not available to the employees to measure sanitizing solution concentration.

• Floor drain under beverage station full of empty bottles.

• Working container of spray bottles not properly labeled.

• Food employees working at cook line not wearing a hair restraint.

• In-Use Utensils are stored incorrectly in dry ingredient bins.

• Observed old gloves stored on food prep areas.

• Excessive ice build up present in walk in freezer.

• Grease was found dripping from the components of the exhaust ventilation hood system.

• A thermometer is not provided in all refrigeration units.

• Can opener is not clean to sight and touch.

• A consumer advisory is not provided for serving raw or undercooked food

• Exterior door gap allows access for pests.

• Nonfood-contact surfaces of the wooden legs of the sink are no longer easily cleanable.

• Floor in the bar area were found in a state of disrepair, or not to be smooth and easily cleanable.

• Ice machine is not clean to sight and touch.

• Chlorine sanitizer measured 0 ppm at dish machine.

• Food storage containers are not labeled.

• In-use utensils in disrepair- dry ingredient utensils being used without handle to prevent contact with food.

• Outside waste receptacle lid/cover not properly secured – receptacle lid damaged.

• Person in charge is not a Certified Food Protection Manager who has shown proficiency of required information through passing a test that is part of an accredited program.

• Can opener blade is not clean to sight and touch.

• Soda gun nozzle is not clean to sight and touch.

• Common bowl, or scoop without a handle, observed in direct contact with beverage ice in the bar area.

• Test kits or other devices are not available to the employees to measure sanitizing solution concentration.

• Broken and damaged flooring tiles in the food prep and dry storage area were found in a state of disrepair, or not to be smooth and easily cleanable.

• Exterior door gaps allow access for pests.

• Floor mats and duckboards found in Milk refrigerator area are not removable or easily cleanable.

• Disposable paper towels not provided at the hand washing sink.

• Soil residue present on the bakery department floor.

• A Certified Food Protection Manager is not present at the food establishment during all hours of operation.

• Person in charge is not a Certified Food Protection Manager who has shown proficiency of required information through passing a test that is part of an accredited program.

• Pink slime present in ice machine bin, not clean to sight and touch.

• Equipment found in use on-site does not meet ANSI/NSF sanitation standards (domestic style microwaves, reach-in refrigeration unit, small appliances, etc.).

• Food service facility only has a two compartment sink and mechanical warewashing machine to wash, rinse and sanitize equipment and utensils.

Most of the violations are handled on the spot and a few require follow-up visits. Twelve of the 13 were routine inspections, and there was one follow-up.

This week’s clean bill of health: Red Brick Cafe, 514 W. Union St., Chester.

No inspections were reported through the Pennsylvania Department of Agriculture website by the Delaware County townships that don’t rely on the county health department.
